The EggaMuffin B-fast is one of the Hungry Girl Diet breakfast recipes that is recommended for Week 2 and beyond.
This is a pretty easy recipe, but probably best to make on weekend mornings. I don’t feel like this would travel or reheat as well as the oatmeal and yogurt parfait recipes. While I would have preferred fresh raspberries on the side, they are expensive and spoil fast, so I opted for the frozen ones. (That’s why it’s kind of a gross mess on the side.) They might not look beautiful, but they still taste great!
