And the award for most beautiful salad goes to . . . This is a great salad (in part because I have been obsessed with beets lately – I have no idea why)! I made it with shrimp and opted to fork-dip a yogurt-based blue cheese dressing because I don’t love vinegar. This was a fresh and filling salad that was a perfect summer lunch!
